My Gluten-Free Journey
My food journey took an unexpected turn about ten years ago. I was always the “foodie” in my group, constantly baking, experimenting, and hosting dinner parties. Then, after months of unexplained health issues, I got my diagnosis: Celiac disease.
Honestly? I was devastated. It felt like my world—a world filled with crusty bread, chewy pasta, and flaky pastries—was over. My first attempts at gluten-free cooking were… disappointing. Gummy bread, crumbly cookies, and bland dinners became my new, sad reality.
I refused to accept this. I dove headfirst into food science, learning everything I could about gluten-free flours, binders, and techniques. The kitchen became my lab. After countless (and sometimes hilarious) failures, something clicked. I wasn’t just *replacing* gluten; I was *discovering* new flavors and textures from ingredients like almond flour, buckwheat, and tapioca.
Zero Gluten Recipes was born from that journey. It’s my place to share all the reliable, tested, and truly delicious recipes I’ve created. This isn’t about restriction; it’s about celebration and rediscovering the joy of food, completely gluten-free.
